sweet potato fries

So, in my last post I got so worked up about paprika, I couldn’t stop thinking about these sweet potato fries! They are drenched in paprika. In fact, paprika is the only ingredient! (Well, besides sweet potatoes, of course. And a little lube.) Baking these potatoes allows all their natural sweetness to come through and mix with the smokey paprika… so good!

Sweet Potato Fries

Sweet Potatoes (one per person)

Paprika

A little canola or olive oil

Preheat oven to 400.

Cut the sweet potatoes into long ‘steak fry style’ strips (say, 1 x 3 inch?).

Place on baking sheet in single layer (don’t crowd them, they need some room to get crispy).

Shake a generous amount of paprika over potatoes.

Drizzle with olive or canola oil.

Bake for 20-30 minutes, until edges brown. (Flip fries halfway through bake time.)
