What is it about grilled cheese & tomato soup that warms you to your bones?

Let’s move beyond the weird, processed square of bright yellow cheese, and stop digging for a can opener to pry open the Campbell’s can. This is the perfect day for homemade comfort food. It’s cold and rainy. My windows are getting foggy in the kitchen from my simmering soup. It’s gonna be a good lunch.

Did I mention this is a recipe for grilled pimiento cheese sandwiches? Read on, sista, read on.

Grilled Pimiento Cheese Sandwiches

3/4 cup mayonnaise (3-4 big dollops with a Tablespoon)

1 (4 oz) jar of diced pimiento, drained

1 small onion, finely diced or grated

1 tsp. worcestershire sauce

1/4 tsp. ground red pepper

1 (8oz.) block sharp cheddar cheese, shredded

1 (8oz.) block white cheddar cheese, shredded

1 loaf white or wheat bread

Stir together first 5 ingredients in a large mixing bowl until blended. Sprinkle in cheeses.

Heat a griddle or large skillet over medium heat. Spread generous amount of pimiento cheese on bread and assemble sandwich. Spread the outside of sandwiches with butter. Spray skillet with cooking spray.

Place sandwiches on hot skillet and toast until golden (about 2-3 minutes on each side).Serve hot.

Creamy Tomato Soup

6 Tbs. butter or olive oil

1 large onion, diced

3 cloves garlic, diced

2 (14oz.) cans diced tomatoes (I like Hunt’s)

4 cups tomato juice

2 cups chicken stock

3 Tbs. sugar

3 Tbs. basil

1 Tbs. parsley

1 pinch salt

black pepper

1/2 cup sherry

1 cup cream

Melt butter in dutch oven or soup pot. Saute onions & garlic until onions are translucent. Add canned tomatoes, tomato juice, stock, sugar, salt, pepper, basil, and parsley. Bring to a boil, then turn off heat.

Using and immersion blender, pulse contents until smooth. *A regular blender or food processor can be used, or, if you like a chunky soup, just omit this step altogether.

Stir in sherry & cream.
