Hamburger Cheese Steak

You know how mom’s have several ‘staple’ meals that you have over & over again throughout your childhood? Well, this is a recipe for one of my mom’s. It was always (and still is) my favorite. It is browned & somewhat crunchy on the outside with gooey cheese that oozes out from the center when cut, topped with slightly sweet caramelized onions. This steak reminds me of my boisterous family crowded around a big, rustic, wooden table. There was no etiquette or formalities. Just a hungry bunch listening to each others accounts of the day while filling our bellies ’til they popped. We are lucky enough to still gather around that big wooden table once a week or so. And last night, mom made my favorite.

Hamburger Cheese Steak with Caramelized Onions

serves 4

1 1/2 lbs. ground hamburger meat

4 American or Cheddar cheese slices

1 large sweet onion, sliced

flour

salt & pepper

Oil

Form hamburger meat into 8 thin patties. Salt & pepper each side. Sandwich 1 slice of cheese between 2 patties and press the edges of patties together to seal. You will have 4 steaks.

Dredge each side of steak in flour.

Heat about 3 Tbs. oil in a heavy skillet. Brown steak in skillet on each side until meat is cooked through. Add onions and saute until browned and caramelized (at least 15 minutes).

Serve steak with onions on top.

    just thought i would add that if you fold that cheese in a small square it seems to keep more of the cheese inside the meat instead of in the pan frying…
