Fruit Salad

I know, okay…”Really, fruit salad? It’s February.” All I’ve got to say for myself is, “Yes! Fruit Salad! In February!” And it was better than you can imagine.

Just yesterday I was self-diagnosing myself with Seasonal Affective Disorder and desperate for a swift mood boost. The dreary, cold days were wearing me thin on the edges. I was finding myself watching too much tele and finding more & more lame excuses to skip out on Zumba class. Then today the glorious sun came out and turned it all around for my poor little mood. The warm beams transformed this gloomy-doomy gal into a cheery, bright, bubbly soul craving a summer-time-afternoon-worthy fruit salad. And the produce section did not disappoint. Gorgeous troves of organic produce was gleaming (and on sale!) as I walked through the big, supermarket doors, just waiting to become a sweet little sunny-day snack.

And, yep, I know any ding-dong can throw together a fruit salad, but sometimes (when the sun is not illuminating your inner light) we just need a reminder of how effortless & satisfying a simple fruit salad can be. Consider yourself prompted.

Vanilla-Dressed Fruit Salad

about 3 cups of your favorite fruit, I used:

1 cup blueberries

1 cup green seedless grapes

1 cup strawberries, sliced

2 ripe bananas, sliced

1 vanilla flavored yogurt cup

juice of 1 orange

1 Tbs. honey

1 tsp. vanilla extract

Combine fruit in a large bowl.

Fold in yogurt, orange juice, honey, & vanilla extract.

Serve chilled.
