Crispy Crusted Catfish

Catfish is called the “fish of the south”. I suppose I am good little southerner because I love a good fish fry! I recently came across a couple of catfish recipes that I had marked to try; one that was oven-fried and the other doused in creole and I just knew that together they would make the perfect Just-An-Ordinary-Thursday-Night-Catfish-(Oven)Fry. It was true. The fish was big on flavor and had a whole lot of crunch. Even Jasper, who is not a big fan of fish, can’t get enough of  this slightly spicy, corn flake-crusted, oven-fried catfish recipe.

Crispy Crusted Catfish


1 egg

1 clove garlic, minced

1 cup crushed cornflakes

Creole

1 tsp oregano

1 tsp paprika

1/8 tsp crushed red pepper

2 catfish filets

2 Tbs. olive oil

Set up a 2 dish breading station.

Whisk egg & garlic in the first dish.

Combine crushed corn flakes, oregano, paprika, & crushed red pepper in the second dish.

Season catfish generously with Creole seasoning. Dredge in egg mixture, then in cornflake mixture. Push breading into fish lightly to coat.

Arrange on a baking dish. Drizzle with olive oil (or butter). Bake at 375° for 15 minutes or until crust is golden.
