Chocolate Pound Cake

Today was rainy and gloomy and I was stuck inside with my miserable congested head. I decided not to let this stuffy nose get me down another day.

So. Today. I. Baked.

I have made Buttermilk Pound Cake many times, but always used it as a base for strawberry shortcakes. Today called for CHOCOLATE! (I needed the antioxidants to fight my cold.) So, I upped the wet ingredients a bit, added loads of cocoa and big chocolate chunks. I like it with just a dollop of sweetened whipped cream. But, I am including a chocolate glaze recipe, in case that’s your thing.

This cake is slightly crispy on the outside. Moist, chocolaty, dense, & buttery inside. I’m just gonna go ahead and stop typing here so you can go check your pantry for the ingredients, because you know you wanna make this for dessert tonight.

Chocolate Pound Cake

1 1/2 cups butter (3 sticks), softened

3 cups sugar

5 eggs, room temperature

3 cups flour

1 tsp. baking powder

8 Tbs. cocoa

1 Tbs. instant coffee

1 4oz. bar of semi-sweet chocolate, cut into chunks

1 cup buttermilk

1 tsp. vanilla

Cream butter & sugar until creamy. Add eggs, one at a time, beating after each addition.

Combine buttermilk, instant coffee, and vanilla in a bowl with a spout.

Combine flour, cocoa, baking powder, and a pinch of salt (unless you are using salted butter) in a separate bowl.

Alternately add flour mixture & buttermilk mixture to the creamed butter, beginning and ending with the flour. Scrape down the mixing bowl several times. Beat just until smooth.

Stir in chocolate chunks.

Pour into greased & floured tube/bundt pan

Bake at 325° for 70 minutes.

Chocolate Glaze

4 squares unsweetened chocolate
1/2 cup butter or margarine (1 stick)
1 pound unsifted confectioner’s sugar
1/8 teaspoon salt
1/2 cup evaporated milk
1 teaspoon vanilla

Melt chocolate & butter over a double boiler. Mix sugar, salt, milk, & vanilla until sugar is dissolved.  Pour the milk mixture into the chocolate and stir until smooth. Let stand to thicken. Drizzle over cake.
