Salmon with Rosemary & Garlic Cream Cheese

My husband loves steak. When the weather gets warm, he could grill steak just about every night for dinner. Now, I like a steak, but i am only interested about once a month. This is something I will have him throw on the grill for me, so we can both have what we’d like for dinner. It is simple to prep. Quick to cook. Pretty heart healthy. And very, very satisfying.

Salmon is perfect grilled on a cedar plank. The wood gives it a little smokey flavor. This evening I forgot to soak one, so I improvised with an aluminium foil ‘pan’ that I folded up and drizzled with olive oil. Just place it directly on a hot grill and allow the salmon to cook with the grill hood on. It worked out nicely.

Salmon with Rosemary & Garlic Cream Cheese

1 (about 4 oz.) serving salmon

1.5 – 2 oz. light cream cheese

1 tsp. garlic (or garlic powder)

2 sprigs fresh rosemary

1/4 tsp. fresh ground pepper

1/4 tsp. kosher salt

cedar plank, soaked (or aluminum foil ‘pan’ drizzled with olive oil)

Season the salmon with salt.

Place salmon on a cedar plank or foil ‘pan’. Drizzle with olive oil.

Mix the garlic with the cream cheese and spread over salmon.

Lay rosemary over cream cheese and grind fresh ground pepper over the top.

Grill, with grill cover closed, for about 10-13 minutes, until opaque.
