Watermelon Sherbet

This watermelon sherbet is so light and refreshing on a hot summer day. Surprise (and impress) your 4th of July buddies and put this in your ice cream maker! You can thank me on the 5th. : )

Watermelon Sherbet

This recipe makes enough to fill a small 3 Qt. Ice Cream Maker. If you have a larger machine, double the batch.

1 seedless watermelon

1/2 cup sugar

1/3 cup water

1/3 cup heavy cream

1 Tbs. lime juice

Flesh out watermelon into a large food processor or blender. Pulse several times, until smooth. Sieve pureed watermelon through mesh strainer and discard bulky pulp and seeds that remain.

Heat water in microwave until near boiling point (several minutes). Add sugar and stir until completely dissolved. Allow to cool to room temp.

Lightly whip cream in a bowl.

Combine watermelon, sugar water, and whipped cream in ice cream bucket.

Churn in ice cream machine until set.
